Pavement's cover of The Killing Moon is possibly the greatest cover of all time. To me; better than the original!
Also, I like Pete Yorn's cover of Ever Fallen In Love, but it's the Buzzcocks and their version is always better.
Also, have you ever heard Flunk's cover of Blue Monday? Gorgeous.
I think most of these songs have been covered before. I mean, didn't Blink 182 do Dancing With Myself?

The coolest cover I've heard lately is DJ Z-Trip w/ Run Run Run doing Mazzy Stars "Fade Into You"

Blancmange, eh? That choice alone shows some depth....

I'd have to say my top favorite latest covers are:
-The Kooks doing Gnarls Barkley's Crazy!!!
-Wolf Parade doing Claxxon's Lament by Frog Eyes
-The Editors doing REM's Orange Crush

I also liked Franz Ferdinand doing Gwen Stefani's What You Waiting For

The song is great. The album is better, it is a really complete album... where very song is unique and great in its own right. Awesome album. Their version of Gone Daddy Gone is so cool.
